Sea bass with grilled spicy citrus
What do you need:
- 4 fillets of perch
- 1 small onion, cut into cubes
- 1 small piece (the size of a walnut) of fresh ginger, peeled and cut into thin slices
- 1 small bundle of fresh, chopped coriander
- 1/4 cup olive oil
- 1/4 cup lemon juice
- 1 tablespoon chopped garlic
- 2 teaspoons shredded lime peel
- 2 teaspoons chopped jalapeno chili
- 1 teaspoon freshly ground pepper
- Sea salt to taste
Mix onion, ginger, coriander, garlic, chili, olive oil, lemon juice, lemon peel, and pepper in a blender or food processor. Press until the ingredients form a dough. Put the fish fillets in a bowl and season lightly with sea salt. Rub the dough evenly on both sides of each fish. Cover and ice for at least 1 hour.
When ready, season the fillets again with salt. Spray the grill pan with cooking spray and cook the sea bass over medium-high heat until cooked through, about 4-5 minutes on each side. Remove from heat and move to plate.
It is best served with salad or grilled vegetables.
Garlic Pepper Shrimp BBQ

What do you need:
- 1 kg. shrimp, clean, rinse and dry
- 1 large clove of garlic, chopped
- 2 tablespoons olive oil
- 1 tablespoon coarse salt
- 2 teaspoons freshly squeezed lemon juice
- 1 teaspoon Abuja
- 1/2 teaspoon cayenne pepper
- 1 lemon, sliced
To make a spicy pasta, mix together the garlic, olive oil, salt, lemon juice, paprika, and cayenne. Grease the pasta with shrimp and let stand for at least 15 minutes. Place the prawns in a lightly greased pan or place them in a skewer.
Cook on a preheated grill over high heat until cooked through, about 2-3 minutes on each side. Transfer to a plate and serve with lemon slices.
